Cheeses, cured meats, Parampampoli according to Trentino tradition

Our product range includes:

Crucolo cheese, Crucolina cheese, fresh and cured meats. Not to mention liqueurs and grappas, including the famous Parampampoli.

Cheese production

For Crucolo cheeses, the company has chosen a path of authentic enhancement of the raw material. It all starts with 100% Italian milk from cows grazing in the permanent pastures of Brenta. The cheeses are then taken to Valsugana, where they are aged in dedicated rooms: here, under controlled temperature and humidity conditions, they are turned, moistened and washed by hand twice a week by specialised personnel to guarantee the same unmistakable quality and flavour as always.

Cured meat production

For Crucolo cured meats, the company has chosen to keep the Trentino artisan tradition alive, combined with a selection of the finest raw materials. It all starts with high-quality meats, expertly processed and flavoured with selected spices, as per the original recipe from Rifugio Crucolo. Speck, lucanica, salami and other specialities are then cured in controlled environments, where time, patience and the crisp Trentino air complete their unmistakable flavour. Each product is handmade, with the same care and authenticity that has characterised our history for over a century.

What relationship do you have with the local area in your production?

All our production stems from a deep connection with the Valsugana valley and the Lagorai Dolomites: we respect the seasons, use local raw materials whenever possible and process every product using traditional methods handed down through generations.

What is the secret ingredient in Crucolo cured meats and cheeses?

In addition to the quality of the raw materials and skilled craftsmanship, there is the magic of our territory: the crisp air of Trentino and the deep connection with the history of the Crucolo Refuge, which has inspired every one of our products for over a century.

The Authentic Spirit of Trentino

From carefully selected Trentino pomace to infusions of mountain herbs and fruits, each bottle encapsulates the soul of the territory. Crucolo grappas are made from typical grape varieties such as Chardonnay, Muller Thurgau and red grapes, while the liqueurs express a unique balance between Alpine nature and Mediterranean influences, with ingredients such as mountain pine, cornelian cherry, basil and lemon. Tradition, passion and respect for the seasons guide every stage of production.

Certifications and quality

We are characterised by our commitment to maintaining high quality and organoleptic standards, scrupulously adhering to health and safety parameters, and paying close attention to consumer health through the meticulous selection of ingredients. Our products are GMO-free, gluten-free (listed in the AIC Handbook), free from milk derivatives in the case of meat, and we favour Italian pork from consistently qualified suppliers. The Filiera Agroalimentare Trentina srl cured meat production plant has been IFS certified since 2019.

Valsugana is also the first GSTC-certified eco-sustainable area.

In 2006, Crucolo expanded its production capacity with the creation of Filiera Agroalimentare Trentina, a plant specialising in the slaughtering and production of raw and cooked cured meats, seasoned meats, speck and salami. The Qualità Trentino mark, which guarantees the provenance, origin and processing of the products, is applied to our Luganega Crucolo, selected and obtained from 100% Italian certified pork.

The facility adds to the processes already controlled by the company in the cheese maturing and refining sector.
