The Purin family, who have run the Crucolo Mountain Hut since 1782, are listed in the register of historic businesses and have been producing traditional cured meats and cheeses ever since.
Thanks to customer loyalty, they have moved from maturing their products in the mountain hut’s cellar to establishing themselves in the agri-food market with their own wines and spirits.
Our motto
“DA NA ROBA FATA BEN PER FARLA MEIO BASTA ‘NA NINA DE PASION”
(all it takes to improve something that’s already well done is a little passion).

The warm welcome and respect for tradition make Rifugio Crucolo a special place.
Amidst the scent of wood and the warm mountain atmosphere, you can enjoy a convivial experience that reveals the most authentic side of Trentino. Typical local dishes are served: canederli (dumplings), pasta and bean soup, sauerkraut with pork ribs and cotechino (cured sausage).
The dishes are served on large trays in the centre of the table, as was once customary in Trentino families, so that everyone can savour every flavour and every story together. At the end of the meal, don’t miss out on Parampampoli, a flambéed drink that warms the soul and the atmosphere.
Before leaving the restaurant, the owners accompany guests to the historic cellar, where salami, lucaniche sausages, speck, cheeses, the longest salami in the world and the largest cheese wheel are aged: a surprising finale to an experience to remember.
The Crucolo farm is in Valsugana, at the foot of the Lagorai mountain range — part of the Dolomites — in Trentino, an area steeped in history, nature and ancient food and wine traditions. Surrounded by pastures, woods and streams, we work in harmony with the environment that nourishes us, transforming local raw materials into genuine, high-quality products.
Love and respect for our land, passion for our work, care for people: these are the values that have always guided us.
Here, in Val Campelle, at an altitude of over 1,100 metres, the Purin family founded the Crucolo Refuge in 1782: a mountain inn that has been welcoming travellers, shepherds and hikers for more than two centuries. Between the peaks of Lagorai and the meadows of Valsugana, our history is intertwined with that of a unique territory, which gives us inspiration and authenticity every day to bring to your tables.
